🥕 Hearty Mulligan Stew 🥔
Mulligan Stew is the ultimate comfort food, loaded with tender beef, hearty potatoes, carrots, and other vegetables in a savory, rich broth. Perfect for chilly days, this one-pot meal is easy to make and brings everyone back for seconds!
Ingredients:
1.5 lbs beef stew meat, cubed
Salt and pepper to taste
2 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
4 carrots, sliced
3 potatoes, diced
3 celery stalks, sliced
1 can (15 oz) diced tomatoes
4 cups beef broth
1 cup frozen peas
1 tsp dried thyme
1 bay leaf
Fresh parsley for garnish (optional)
Instructions:
Brown the Beef: Season stew meat with salt and pepper. In a large pot, heat olive oil over medium-high heat. Add beef and cook until browned on all sides. Remove and set aside.
Sauté Vegetables: In the same pot, add onion and garlic. Sauté until onions are soft and fragrant.
Build the Stew: Add carrots, potatoes, celery, browned beef, diced tomatoes, beef broth, thyme, and bay leaf. Stir to combine.
Simmer: Bring to a boil, then reduce heat to low, cover, and simmer for 1.5-2 hours, or until the beef and vegetables are tender.
Add Peas: Stir in frozen peas and cook for an additional 5-10 minutes.
Serve: Garnish with fresh parsley if desired and serve hot.
