Garlic Shrimp Pasta 🥘
1 lb medium shrimp, deveined and tails removed
1 lb spaghetti noodles (more or less, depending on family size)
6 -8 garlic cloves, according to personal taste, minced
1/4 cup butter
olive oil (3 drizzles)
italian seasoning
fresh ground pepper
red pepper flakes
salt
herbs (according to taste)
1 Boil pasta in water till tender, save 1 cup of pasta water for use later. I always put some oil, salt, and fresh herbs in with my pasta when I boil it. Drain and set aside when done.
2 While pasta is boiling, wash shrimp.
3 Melt butter over medium heat. Add shrimp.
4 Let cook till a little pink and starting to curl. Then add garlic.
5 Cook 5-7 min., add oil. Continue to stir till shrimp is pink and curled.
6 Add pasta to skillet. Add seasonings. Add just enough saved pasta water till it is not dry but not swimming in liquid either. Depending on amount of pasta this requires 1/2 the cup or all of it. Start with adding 1/4 of it then work up from there.
7 Keep tossing all ingredients around in skillet till all is incorporated and hot.

EASY CHEESY TACO STICKS
Ingredients :
1-pound lean ground beef
1 packet taco seasoning mix
1 tube refrigerated Pillsbury pizza dough
5 Colby jack cheese sticks cut in half
1/4 cup butter melted
1 teaspoon garlic powder
1 teaspoon dry parsley
Directions :
Step 1: Ready the oven and preheat to 215 degrees C or 425 degrees F.
Step 2: Apply cooking spray in a large baking sheet.
Step 3: Place a skillet on the stove and turn the heat to medium.
Step 4: Add the ground beef and cook until brown.
Step 5: Remove the excess grease and add in the taco seasoning. Stir until well mixed.
Step 6: Remove from the heat and let it sit at room temperature to cool.
Step 7: Place the pizza dough on a flat surface. Slice into 5 rectangles and cut into 10 equal triangles.
Step 8: Spoon the taco meat in the middle of the dough and place Colby Jack cheese stick on top. Repeat this method until all the doughs are filled.
Step 9: Roll each dough to make a breadstick.
Step 10: Place the taco sticks on the greased baking sheet.
Step 11: In a small mixing bowl, add the garlic powder, butter, and dry parsley. Stir until well mixed, then brush the mixture on top of each breadstick.
Step 12: Bake inside the preheated oven for 10 to 12 minutes or until the colour turns golden brown.
Step 13: Remove from the oven and serve right away.

Easiest PHILLY CHEESESTEAK STUFFED PEPPERS 😋😋 These are hands down tasty!
Ingredients
3 Bell Peppers
1 lb. Beef (Ground)
8 oz. Mushrooms (Chopped)
1 Onion (Chopped)
2 tbsp. Ketchup
1 tbsp. Worcestershire Sauce
1 cup Beef Broth
8 oz. Mozzarella Cheese (Shredded)
Salt And Pepper To Taste
Directions
Preheat the oven to 350 degrees. Slice the tops off of the peppers and deseed them.
Place the ground beef and onion in a skillet over medium high heat. Saute until the beef is browned and the onion has softened.
Stir in the chopped mushrooms.
Mix in the beef broth, Worcestershire sauce, ketchup and salt and pepper to taste.
Simmer until the liquid is almost all absorbed. Stuff the peppers with the meat mixture.
Sprinkle with the cheese. Tent a piece of tin foil over the baking dish and bake for 45 minutes.

White Chicken Enchiladas w/ Green Chilies! - Seriously, the BEST enchiladas you'll ever make!!

10 soft taco shells
2 cups cooked, shredded chicken
2 cups shredded Monterey Jack cheese
3 Tbsp. butter
3 Tbsp. flour
2 cups chicken broth
1 cup sour cream
1 (4 oz) can diced green chilies

Directions
Preheat oven to 350 degrees. Grease a 9x13 pan
Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.
In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
Stir in sour cream and chilies. Do not bring to boil, you don't want curdled sour cream.
Pour over enchiladas and top with remaining cheese.
Bake 22 min and then under high broil for 3 min to brown the cheese.

*side note - the sauce doesn't freeze very well, so if you're making them ahead of time. Just make and freeze the Enchiladas. Make the sauce the day of.

Bacon Cheeseburger Eggrolls 🥓🧀
Ingredients
2 pounds ground beef
4 slices of bacon
½ white onion diced
5 cloves of garlic, minced
½ cup diced pickles or pickle relish
½ tsp salt
½ tsp pepper
¼ cup cold water
2 tsp cornstarch
1 cup shredded cheese
15 to 20 egg roll or wonton wrappers

Instructions
Fry the bacon in a large skillet
Set to the side when done frying
In the same pan, add the garlic and the onion and saute until the onions are translucent
Add the ground beef to the pan, crumbling it as you add it
Season with salt and pepper. Cook until the ground beef is no longer pink
Remove from the heat and drain the excess fat from the pan
Chop the bacon into pieces and add to the beef
Add in the pickles and the cheese and stir well
Mix cornstarch and water together and using a pastry brush, brush the outer edges of the egg roll wrappers with the mix
Add roughly 3 tbsp of hamburger mix at one edge of the wrapper. Make it ½ inches from the sides
Fold in the sides of the wrapper and roll the wrapper and beef up lengthwise
Continue until all the ground beef mix is used
Heat oil in a skillet about ½ inch deep, when the oil is hot carefully place some egg rolls in and fry, turning routinely to get all sides a golden brown
Place the egg rolls on paper towels or a cooling rack and continue until all rolls are cooked
Serve with a dipping sauce of choice or mix ketchup with mayonnaise and add pickle relish to have a Big Mac style dipping sauce

Pepperjack Meatloaf Recipe
Ingredients
1 egg
1/4 cup chopped onion
1/2 to 1 teaspoon salt
1/2 teaspoon pepper
1-1/2 pounds lean ground beef (90% lean)
1 cup (4 ounces) pepper Jack cheese, divided
1 cup salsa, optional
Directions
In a large bowl, combine the egg, bread crumbs, onion, salt and pepper. Crumble beef over mixture and mix well. Press half of the beef mixture onto the bottom and halfway up the sides of a greased 8-in. x 4-in. loaf pan. Sprinkle 3/4 cup cheese over meat to within 1/2 in. of sides. Pat remaining beef mixture over cheese.
Bake, uncovered, at 350° for 50-55 minutes or until meat is no longer pink and a meat thermometer reads 160°. Sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted. Let stand for 10 minutes before slicing. Serve with salsa if desired. Makes 6 servings.

Twice Baked Potato Rounds
4 large potatoes, cut into 1/2 slices (used russet & yukon potatoes)
1/4 c butter, melted
salt & pepper to taste
2 Tbsp garlic, minced
8 slice bacon cooked, crumbled
8 oz cheddar cheese, shredded
1/2 c green onions,chopped
sour cream
Preheat oven to 400 degrees F (200 degrees C). Brush both side of potato slices with butter, add salt, pepper and garlic; place them on a parchment lined baking sheet.
Bake in the preheated oven for 30 to 40 minutes or until lightly browned on both sides, turning once (I forgot to turn them, they were fine).
When potatoes are ready, top with bacon, cheese, and green onion; continue baking until the cheese has melted (I just turned the oven off and let the heat melt it all). Serve with sour cream if desired Enjoy!!

Hashbrown Hamburger Casserole with Veggies and Cheese

2 tsp olive oil
1 onion, chopped
1 pound lean ground beef
2 Tbsp flour
2 Tbsp ketchup
1 cup beef broth
3 Tbsp Worcestershire sauce
salt and pepper to taste
2 cups frozen mixed vegetables
1 20 oz. package of refrigerated hash brown potatoes (apps 3 1/2 cups)
1 cup shredded cheddar cheese
1/4 cup butter, melted

Heat oven to 375 degrees. Coat a 9×13 baking pan with cooking spray.
In a frying pan, cook onion in olive oil over medium high heat until translucent. Add in ground beef and cook until browned. If there is a lot of fat from the ground beef, pour it off at this time.
Add in the flour and cook for one minute, stirring.
Add in ketchup, broth, Worcestershire, salt and pepper and veggies. Cook for 5 minutes.
Spread mixture in bottom of 9×13 baking pan.
In a medium bowl, mix potatoes, cheese and butter.
Spread potato mixture over beef/veggie mixture.
Bake 45 minutes or until hash browns are golden brown
