“Cool climate” is on half the labels in Niagara. Here’s what it actually means. 🍷

Lake Ontario keeps winters mild and summers from overheating; the Escarpment traps that air over the vines. Grapes ripen slowly, hold their acidity, and the w**es come out brighter and lower in alcohol than hot-climate bottles.

Harvest is almost done, so why are some rows still full of grapes? 🍇

Those are the icew**e rows. Wrapped in netting to keep the birds off, left on the vine until the first hard freeze (usually December, sometimes January), then picked by hand at night at -8°C or colder. The frozen water stays behind as ice and only the concentrated juice goes to press.

It’s one of the things Niagara does better than almost anywhere in the world, and you can see the netted rows on a tour right now.
