Influenced by centuries of trade with countries like India, Portugal, the Netherlands, and Britain, Sri Lankan cuisine has evolved into something truly unique.
At the heart of most meals is rice, usually served with a variety of curries. This traditional meal is often called “rice and curry,” but it’s much more than a single dish—it includes several small portions of different curries, vegetables, sambols (spicy condiments), and pickles. A popular accompaniment is pol sambol, made from grated coconut, chili, lime, and onion, adding a fresh and spicy kick.
